Galette Des Rois

Ingredients

  • 2 sheets of vegan puff pastry
  • 1 cup almond meal
  • 1/2 cup maple syrup
  • 2 tbsp arrowroot flour
  • 1/2 tsp vanilla essence
  • 1/2 tsp almond essence
  • 1/2 tbsp soy milk to "egg wash"

Instructions

  • Preheat your oven to 180 degrees Celsius.
  • Defrost your puff pastry and use a tart tin to cut it into 2 medium-sized         
  • circles.
  • In a bowl combine the almond meal, vanilla, almond essence, arrowroot flour, and maple syrup.
  • Spread it with a spoon over the base then top with another layer of puff pastry.
  • Fold the edges over then brush a little bit of soy milk over the crust and decorate with a knife to make lines.
  • Bake for 40-50 minutes or until nice and golden. Leave to cool down slightly and eat warm
